Cockles are one of the most famous seafoods from the Rías Gallegas region and la Xouba – one of the tiniest sardines – is very highly appreciated in popular Galician sea-based cuisine. Both products are simple and within reach of even the tightest budgets, yet in the hands of this specialist they will become veritable gastronomic jewels. Manicha’s experience turns this seafood and fish, respectively, into dishes belonging to the upper strata of gastronomy.

She currently runs the kitchen at La Taberna de Rotillo, a restaurant known by Galicians far and wide which has received rave reviews in guidebooks as prestigious as Campsa, Gourmetour, Lo mejor de la gastronomía, Michelin and El País, among others.
José Carlos Capel is one of the country’s most veteran and revered food critics. His texts have helped to jump-start the careers of many of today’s top chefs. Champion of the culinary revolution taking place today, he has been awarded countless prizes and has published 14 books on recipes, ingredients and trends. He currently works at the Spanish daily El País.
