In keeping with his innovative philosophy, Carlos Cidón will be in charge of presenting a revolutionary concept: the reology – that is, the study of the physical principles that govern the movement of fluid – of cooking chickpeas. During his appearance, the chef will resolve the most popular mysteries surrounding the world of pulses. Visitors will discover the best tips on conserving and purchasing pulses, as well as their health-promoting qualities and how to cook them.
Inés Ortega, a true expert and specialist on this food family, will provide a brief and brilliant introduction prior to the chef’s performance.

Carlos Cidón represents a turning point in Leonese gastronomy. Master of masters, Cidón has been a pioneer in the modernisation of the region’s cuisine. Indeed, his efforts in employing humble ingredients and local products in haute cuisine have been matched by no one. Thanks to Carlos Cidón, the traditions of his land have leapt onto the international stage. León’s Vivaldi restaurant – with one Michelin star – is, today, the premier showcase for his cuisine.
Inés Ortega was born in Madrid, where she combines her work as a high school teacher with her dedication to the world of gastronomy. From her father José Ortega Spottorno, founder of El País, and her grandfather José Ortega y Gasset, she inherited her interest in communications, whereas from her mother Simone Klein, author of the famous 1.080 recetas de cocina (1,080 Recipes), she inherited her passion for cuisine. She runs the gastronomy section of the magazine ¡Hola!, works in the gastronomy section and has written more than twenty cookbooks, including Cocinar aprender y jugar, and El libro de los potajes, has been also involved in various projects with her mother and much, much more. She has also participated in cooking instruction DVDs for the Spanish daily newspaper El Mundo, and has given talks in both Spain and Paris.
